I’ve always enjoyed spending time in the kitchen but with the pain and fatigue of Fibromyalgia I haven’t been doing much cooking in the last five years.  What I have been doing is working with Ryan to come up with quick and easy meals I can make for lunch and when he is not home at dinner time.  We have started keeping certain foods in our freezer and pantry.  This recipe uses four ingredients, or quick food items, to make a gluten free chicken noodle soup.

What you’ll need to buy:

  • Individually frozen boneless skinless chicken breasts or tenders
  • Frozen mirepoix- Ryan cuts and freezes carrots, onions, and celery that we keep in a freezer bag.
  • Gluten free pasta- I prefer corn or quinoa pasta for soup because it holds together a little better than rice.
  • Gluten free chicken flavored soup and broth base- These come in a screw top jar in a variety of brands.

Frozen ingredients can always be swapped for fresh, I chose frozen here because we keep our freezer stocked with these items most of the time.

The amount of each that you add depends on what kind of soup you like. Chicken-y with a few noodles, noodle-y with little broth, lots of veggies or veggie free.  It’s up to you!!  For this particular batch I used approximately 8oz of pasta, 4oz of chicken, and about a cup and a half of my frozen veggies.

Putting it all together:

  • Cook pasta for about half the time that is recommended for the particular type and brand.  Drain and set aside.
  • Cut your thawed chicken into bite sized chunks.  In a frying pan, with a small amount of oil, cook chicken thoroughly. I did this while my noodles were boiling.
  • In a large enough pot mix the soup base per directions on the jar.  I did not use as much of the base as it called for because I did not want the sodium in my soup.
  • Add frozen veggies, pasta, and chicken to your broth.  Bring to a boil then allow to simmer until veggies are cooked.

That’s about it.  While it was cooking I did a bit of tiding in the kitchen and backed up my laptop to my external hard drive.  All in all pretty productive.  I had a delicious lunch and have another serving plus left for tomorrow. I hope this makes meal planning a little less stress free and allows you to eat a tasty quick meal.  Let me know what you think!
